Gatsby Goat Cheese & Onion Canapés

Ingredients

  • Toasted bread rounds (crostini): 24 (or 1 French baguette) 
  • Olive oil: ¼ cup
  • Salt: 1 pinch
  • Large sweet onions: 6 (e.g. Walla Walla, Vidalia, or Maui)
  • Butter: 4 tablespoons
  • Goat Cheese: 4 ounces, softened
  • Fresh thyme or parsley: for garnish

Directions

1. If making your own bread rounds (you can also buy pre-made crostini), slice a French baguette into ⅓ inch slices. Place on a baking sheet and coat with olive oil and a pinch of salt. 

2. Toast at 400°F (205°C) for 6 mins, then flip the toasts and bake for another 6 minutes. 

3. To caramelize onions, heat a pan or Dutch oven on medium heat. Melt butter in the pan.

4. While it’s warming up, slice onions into ⅛-inch slices. Add to the pan, and stir with the butter to make it evenly coated.

5. Cook the onions, stirring every 5 minutes or so, until the onions are soft and darkened to a brown. They will lose a lot of volume in this process and that’s a good thing! It concentrates the sugars and makes them very tasty. This takes a while to cook down (up to 30 minutes).

To Assemble the Canapés:

1. Spread a dollop of goat cheese on the bread round.

2. Top with a small spoonful of caramelized onions.

3. Garnish with thyme or parsley. Serve warm or at room temperature.
