Canned goods are a man's best friend in a zombie apocalypse, but they're also great for throwing together a tasty side dish in just a few simple steps!
Jump to recipe1. Pour your rinsed and drained beans into a large bowl. (If you are unable to locate a "bean medley" or "bean blend" in your grocery's canned goods section, you can use any combination of kidney beans, pinto beans, black beans, garbanzo beans, lima beans, and black-eyed peas.)
2. Add your onion, pepper, cucumber, cherry tomatoes , olives, and parsley to the bean mixture, and stir to combine.
3. In a separate small bowl, add italian seasoning, garlic, honey, Dijon mustard, vinegar, salt, and pepper. Whisk to combine.
4. Slowly drizzle olive oil into seasoning mixture, whisking continuously to create a vinaigrette.
5. Pour vinaigrette over bean mixture and toss to coat everything.
6. Serve immediately, or chill for a few hours to let the flavors combine.
TIP: For a zombie apocalypse themed party, serve your bean salad in tin cans! Save a few empty cans, remove the labels, then wash and dry to use as serving vessels. (Be sure NOT to use cans that have a sharp edge — we don't want our zombie apocalypse party to become an actual bloodbath, now do we?)
